
We’re back in the RocketKitchen for a super-easy dessert recipe to impress family and friends with this holiday season.
After we polished off the huge portion of roast beef we’d made in our rice cooker, our thoughts naturally turned to dessert. And since we had our rice cooker sitting right there, we decided to once again call on the services of the surprisingly useful kitchen appliance.
We knew from experience that we could make awesome pancakes in the rice cooker, and this time we decided to add a couple of new flourishes. We wanted something a little sweeter and a little fancier, something that we could use to impress people by showing up with at a Christmas or New Year’s party. Of course, we also wanted something that wouldn’t take that much effort, since our sense of hospitality exists in pretty equal measure to our laziness.
And so, we decided to make a giant sweet apple pancake in our rice cooker, using ingredients that you’ve probably got in your house right now.
● Ingredients
2 apples
50 grams (1.8 ounces) butter
lemon juice
honey
50 milliliters (1.7 ounces) nonfat milk
100 grams (3.5 ounces) pancake mix
1 egg
● Directions
1. Cut both apples into large slices (we got about eight wedges from each piece of fruit) and place in the rice cooker.
2. Cut the butter into a few slices, and add them to the pot, along with a few squirts of honey and lemon juice, depending on how sweet or tart you want the finished product to turn out. Mix the contents together inside the pot.
3. Set the rice cooker to its normal rice-cooking setting, and let the cycle finish (this should take somewhere between 45 and 60 minutes, depending on the exact model you’re using).
4. Once the cycle is finished, open up the lid, and you should see your baked apples resting in a pool of delicious drippings. Pour the drippings out of the rice cooker and into a bowl, then mix in the milk (combining the two should give you about 100 milliliters [3.4 ounces] of liquid).
5. Mix the egg into the combined milk/apple drippings, using a whisk and enough speed to build up a bit of froth. Once you’ve giving everything a thorough stirring, gradually add in the pancake mix while stirring everything to a smooth consistency (you may want to sift the pancake mix before you add it in, to remove any excesses clumping).
6. Arrange the apple wedges inside the rice cooker spot so that they’re not burying each other, then pour in the batter made from the combined apple drippings, milk, egg, and pancake mix.
7. Start the rice-cooking cycle again.
8. Once the cycle is done, open up the lid. What you see is actually going to be the bottom of the cake, so grab a plate, remove the pot, flip it upside down, and let the cake slide out, so that the twice-cooked apple wedges are tantalizingly visible.
9. Slice the cake, and pass out samples to your coworkers, friends, family members, or anyone else you’re looking to curry favor with. Give them a few moments to appreciate how the flavor is sweet and refreshing, and the cake fluffy and moist.
10. Once they get over your amazing culinary skills, tell them that if they’re extra nice to you, maybe you’ll also make some matcha green tea rice cooker pancakes for them in the new year.
