
Have you ever wanted to make sushi that looks just like a swimming fish? This video shows how to make the stunning dish in your very own kitchen!
After we first laid eyes on the amazing Nishikigoi no Sugatazushi (“Multicolored Koi-Shaped Sushi”) last month, we’ve been wondering just how the adorable morsels were created. Now all our questions have been answered, thanks to an easy-to-follow, step-by-step video guide from JunsKitchen. To see how it’s done, along with instructions for a unique prawn-based sushi and some bonus tips for creating impressive garnishes, check out the clip below.
There’s a bit of technique involved, but the step-by-step instructions make this easy to try at home. Let’s take a closer look at the ingredients and the method used.
Ingredients:
Sushi rice
Spicy cod roe
Squid
Shrimp
Seaweed
Cucumber and radishes to garnish
Method:
First, cook the rice. Be sure to use short-grain rice for the best results. Then, dive in and remove the head and shell of the shrimp. Place a wooden skewer in the back of the shrimp to help keep its shape.
▼ Boil for one minute.
▼ Cut the shrimp down the middle and then lay it flat.
▼ To prepare the first garnish, use the tip of a knife to make several cuts in the baby radish.
Using tiny, precise movements, the radish is quickly transformed into a miniature work of art. That garnish alone is enough to impress dinner guests!
▼ Moving on to the squid, slice into pieces at an angle, as shown.
▼ Cut the surface of each slice in a criss-cross pattern, to create scale-like details. Cut the slice into a thick piece for the body of the fish and prepare some smaller, tapered pieces to use as fins and tails.
▼ Cut the cucumber into thin slices, making sure to only cut through two-thirds of the cucumber, as shown.
▼ Then slice through the piece vertically, making sure not to cut all the way through to the chopping board.
▼ Slice into thick pieces and then press each piece to open them.
▼ Cut some small pieces to use as fins for the fish.
▼ Slice the piece of cod roe in two and use a spoon to scrape the eggs out.
▼ Prepare the cooked rice by adding sushi rice vinegar and cooling it in a shallow bowl. Also prepare tiny cuts of seaweed. Now it’s time to assemble all the ingredients.
▼ Shape the rice into a small, sushi-shaped rectangle and begin by adding a thin layer of cod roe to the top.
▼ Add tiny pieces of seaweed in a random pattern to create the dark patches commonly seen on koi fish.
▼ Carefully place the squid over the piece to create the body, fins and tail.
▼ Add the cucumber ‘fins’ to the prawn sushi and place small, round pieces of seaweed on either side of all the fish heads to create eyes.
And now your creative sushi dishes are complete! The next challenge is to eat the adorable, live-looking fish. Happy eating, everyone!
